Simple Shortbread Recipe

For Miss D

I was telling my granddaughter (Miss D) that I wanted her to taste some biscuits that I had made. She was suitably impressed when I told her how delicious they were. I said that I would bake some just for her and her little sister, and that I would upload the recipe online so that she could see how to make them, and maybe make some of her own one day. So here it is Miss D, just for you, and of course anyone else who would like to try to make them too. They are super easy to make, and absolutely delicious. These are made with wheat flour, so my apologies for anyone who is celiac or gluten intolerant. I have listed the ingredients here, as they are easier to refer to if you’d like to copy them straight from here.

Short Bread Biscuit Ingredients

375grams of plain (white) flour. You can use bread makers flour if you like.

250grams of butter (must be room temperature) soft, but not melted.

125grams of sugar (Castor sugar is best) but icing sugar is also good to use.

A pinch of salt. (Don’t forget the salt) You could probably make it a pinch and 1/2 if you like.

Method

Sift all the dry ingredients together.

Add the butter and mix together so that it forms a dough.

Roll the dough out flat, to about 5 or 6 mm thickness. Not too thick. (*See note*)

Cut into desired shapes and use fork to pierce some holes in pastry.

Preheat oven to 160 deg C

Place on baking paper in baking tin on the middle shelf.

Bake for 25 minutes.

Remove and gently slide them onto baking tray.

Once cool they will harden.

Store in container and enjoy.

Note: Don’t use extra flour on your bench top when you are trying to roll the pastry. Use baking paper if the dough sticks, like I did in the video.
